Crock Pot Chicken ? The Making of a Chef

In case you?re looking for a really quick and easy yet delicious meal, this chicken is the perfect go to. I discovered this while I was on vacation in Minnesota. The weekend especially was busy. Saturday, we had a busy day ahead of us. We did Matt?s for lunch but as soon as we were back in town, we barely had time to stop back home and talk about the day?s plans before heading out to tie-dye. That morning, I?d had the forethought to prep dinner.?

I?d found the inspiration for this meal a while ago. I?d been searching around for chicken recipes and came across it. Seeing as we didn?t have much time before the day out and about on Saturday, it would be perfect. Chicken and equal parts pepsi and barbecue sauce went into the crock pot. It couldn?t have been more simple. When we arrived home before going to tie-dye, I turned the heat down and left it to simmer longer. We didn?t eat until 7 or 8 that night, so the chicken had been cooking about 9 hours. I served it with rice, and it couldn?t have been more delicious. The barbecue sauce and pepsi worked well together and the chicken was flavourful and juicy. Will I be making it again? Naturally, once it becomes colder outside.

This is the perfect busy day dish. All you have to do is set it and forget it. I?m sure as with caramelising onions, you can even prep this dish the night before and let the slow cooker work it?s magic overnight. The longer it cooks, the more fork tender and flavourful it is. Pair it with rice, or maybe pasta. Whichever you prefer.

  • 1 pound boneless skinless chicken breasts
  • 1 cup soda*
  • 1 cup barbecue sauce
  1. Combine chicken, soda, and barbecue sauce in crock pot or slow cooker over medium high heat for 5-7 hours. Serve warm over rice or egg noodles.

*Although I specified Pepsi above, I?m leaving the choice of carbonated drink to you. I would really love to give this recipe a try with my favourite Cherry-Vanilla Coke one of these days.
